Garlic Breadsticks

My friend Michelle had us over for dinner on Sunday. Everything was so yummy. She made these super yummy breadsticks and I begged her for the recipe. She got it from her family cookbook. Thanks so much for sharing Michelle.

Bread sticks
1 pkg. of yeast
1 1/2 cups water
1 tablespoon honey
1 teaspoon salt
4 cups flour

Topping
4 tablespoons of butter
1/4 cup Parmesan cheese
1/8 cup mayo
thyme and garlic powder to taste

Put yeast in warm water to rise. In the mean time put flour, salt and honey in a mixing bowl. Add yeast/ water and mix. Spread the dough on the bottom of a cookie sheet. Spread topping on top. Let rise for 15-45 minutes. Bake at 400 degrees for 15 minutes.

Mexican Lasagne

2 tsp olive oil
1 1/2 cups chopped onion
1 lb zucchini, diced (about 3 cups)
2 1/2 tsp round cumin
1 can (14.5 oz) diced tomatoes with chiles
1 can (15 oz) black beans, rinsed
1 can (11 oz) corn niblets, drained
1 can (10 oz) mild enchilada sauce
1/2 cup chopped cilantro
5 (8 in) whole- wheat flour tortillas
1 1/4 cups shredded reduced- fat Cheddar
Garish: reduced fat sour cream

Heat oven to 400 degrees. Coat a 3 qt round baking dish wit nonstick spray.

Heat oil in a large nostick skillet over medium-high heat. Saute' 5 minutes. Add zucchini and cumin, and saute' 5 minutes or until zucchini is crisp-tender. Stir in tomatoes, beans, corn and enchilada sauce; bring to a simmer. Remove from heat and stir in cilantro.

Put 1 tortilla in baking dish. Top with 1 1/2 cups zucchini mixture; sprinkle with 1/4 cup chese. Repeat layers 4 times.

Cover with foil and bake 20 -25 minutes until bubbly around edgesand cheese is melted. Cool 5 minutes. Cut into wedges and serve with sour cream, if desired.

We had this for dinner tonight and I think they turned out pretty good. Mine didn't look quite as good as the picture though. Pete thought it needed some meat in it. You probably could make it with ground beef or some shredded chicken. I used flour tortillas and pinto beans because that is what I had. I used a pie plate and it wasn't deep enough for 4 layers. I had extra mixture left though so I also made one in a square casserole pan and froze it for another dinner later. It tasted really good. I found this in a Woman's Day magazine.

Sock Monkey #2


Lindsay decided that she loved Landon's monkey. So, we decided to make her one too. I had one more pair of socks so here is the monkey for Lindsay.

I made this sock monkey for Landon's birthday. It turned out ok considering it was my first one. I think he will like it, but I may try again to see if I can make one a little cuter. I think his ears are a little crazy. Oh well. Landon won't care.

Muscling Up Meatballs

This recipe is from the Biggest Loser Cookbook.

3/4 cup Whole wheat breadcrumbs
1/3 cup fat-free milk
1 lb extra-lean ground chicken ( I used ground turkey)
3 large egg whites
1/4 cup chopped fresh parsley leaves
1 tbsp plus 1 tsp of parmesan cheese
2 tsp garlic powder
2 tsp onion powder
1/2 tsp salt

Preheat oven to 400 degrees. Lightly mist a basking sheet with olive oil spray. Set aside.

In a mixing bowl, combine the bread crumbs and the milk. Let stand 2-3 minutes or until the milk softens the crumbs. Add the chicken, egg whites, parsely, cheese, garlic powder, onion powder, and salt. With clean hands or a fork, mix well. Divide the mixture into 16 equal pieces. Roll each piece between your palms to shape into a ball. Place the meatballs, not touching, on the baking sheet. (You can make smaller meatballs.)

Bake for 12-15 minutes, or until no longer pink inside.

These are really good in spaghetti, or for meatbball sandwhiches. Just add spaghetti sauce.

Banana Bread

I got this new receipe for banana bread. So just if you want to try this kind instead of the other one. And it should be good for the banana bread french toast I was telling you both about.

1/2 cup butter
1 1/2 cups sugar
2 eggs- well beaten
1 cups banana
1/4 cup buttermilk
1 3/4 cups flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla
dash of baking soda

Cream butter and sugar. Add eggs, bananas, buttermilk and vanilla. Combine dry ingredients, add to bananas. Bake 55 min @ 350 in greased ban.

Makes 1 big pan or 5 small pans

Banana Bars

Okay, so I haven't tried these yet, but they sound delicious!

1/2 cup butter/ softened
2 cups sugar
3 eggs
1 1/2 cups bananas
1 tsp vanilla
2 cups flour
1 tsp baking soda
dash salt

Frosting

1 8 oz cream cheese
1/2 cup butter
4 cups powdered sugar
2 tsp vanilla

Cream butter and sugar. Add eggs, vanilla, and bananas. Mix flour, salt, and soda. Add to banana mixture. Stir until blended. Bake in greased 15x10x1 pan for 20-25 minutes @ 350. Frost when cooled.

Frosting- Beat butter, cream cheese, add powdered sugar, and vanilla.

Awesome Fruit Dip!

1 container of strawberry cream cheese
1 small container of cool whip
1 small jar of marshmellow cream

Mix together with mixer and serve with your favorite fruits.

Fabric Easter Baskets

Cut 2 squres of fabric, and 1 square of batting 16x16 each.


Cut a 5x5 inch square out of each corner to form a cross.


Cut 2 strips of fabric and 1 strip of batting 12x 1/2 inch for handle of your basket.



Take the crosses ad sew right sides together with a 2/8 inch seam to form a cube.


Sew the right sides together of your handle on outside. Leave an openig to flip. Flip it, and sew the opening and all around the handle.

Match the seams right sides to right side with stuffing on the outside of your basket. Pin your handle in place. Sew together leaving an opening to turn.


Turn it inside out so stuffing is on the inside. Sew the opening and top stitch all around the top of your basket.

Sew a square corner to corner at the bottom of your basket.

Add any ribbon, or lace that you like to decorate your basket.

Chicken Noodle Cassorole

4 Chicken breast Boil with 2 stalks of celery and one small onion till chicken is tender
Cut chicken in bite sized pieces set aside. Save broth to blend in the blender.
1 can cream of mushroom or celery soup
1 can cream of chicken soup
1 can of chicken noodle
1 can of chow mein noddles
1 cup of chicken broth from above

1/2 cup Parmesan cheese
1/2 Cup sharp Cheddar
Mix cheeses together
________________________________________________________________
Mix 1/2 of the cheese mixture and all the other ingredients together. Pour in a 9x 13 casserole dish, top with remaining cheese bake for 1 hour at 325 degrees or microwave for 15 minutes on high.

Chicken and Brocolli Casserole

Boil Chicken, then cut into bite sized pieces 3 breast
1 pkg frozen broccoli thawed and drained thoroughly
Mix together and place in a 9x 13 pan

next step:
Mix together 1 can of cream of mushroom or chicken or celery soup
1/2 Cup mayonnaise
1/2 teas. lemon juice
1 can water chestnuts chopped
1 Cup grated cheddar cheese
Pour over chicken and broccoli

next step:
1 cup cracker crumbs
1/2 cup butter melted
Mix together and place on top of casserole
Bake at 350 degrees till heated through 35-45 minutes.

Mary's Delicious Fruit Custard

1 large container of Vanilla Yogurt
1 sugar free cool whip
1 lrg package of instant vanilla pudding mix
1 package of frozen fruit (berries)

Mix yogurt, cool whip and pudding in container. Top with frozen fruit.

I believe this was a Weight Watcher Recipe.

Dad's Favorite dessert ( Striped Delight)

1 1/2 cup graham cracker crumbs
1/4 cup sugar
1/3 cup melted butter
1 8 oz package cream cheese
1/4 cup sugar
2 tbsp. milk
1 8oz Cool Whip
2 pkgs. 4 servings chocalate instant pudding
3 1/2 cold milk

Combine graham cracker crumbs,1/4 cup sugar and 1/3 cup melted butter, press firmly into a 9x13 pan. set aside.
Beat cream cheese with 1/4/ cup sugar 2 tbsp. milk until smooth fold in half of the cool whip . Spread over the crust.
Prepare instant pudding with the 3 1/2 cups milk. Pour over the cheese layer. Chill several hours or overnight. Spread remaining cool whip over pudding, can top with chopped nuts or chocolate shavings.
You can use Pistachio,lemon, or butterscotch pudding in place of chocolate. Alternate crust which is also good.
1 cup sugar
1 c flour
1/2 cup margarine or butter 2 tbsp. milk
Mix together and spread on bottom of 9x13 pan instead of graham cracker crust.

Wanda's Salad

1 can of eagle brand milk
1 20 oz can of pineapple drained
1 cup of chopped pecans
1 can cherry pie filing
1 12 oz. Cool Whip
Mix together, chill. This is really yummy but Tara you will have to substitute.

Apple Jack Cookies

I found this when I was cleaning, it is in Mary's writing from when she was in grade school, maybe they are good and she remembers what grade she was in.

1 cup light brown sugar
1/2 cup shortening
1 egg

1 2/2 cup of flour
1/2 teas. baking soda
1/2 teas. salt
1 teas.nutmeg
1 cup chopped up apples

Cream together sugar and shortening,beat in egg, sift dry ingredients and add to mixture, beat until well blended. Last stir in apples.
Drop in the shape of balls on a foil lined cookie sheet. Bake for 12-15 minutes at 375 degrees.

Homemade Baby wipes

Paper Towel ( Strong Soft Bounty)
2 cups boiling water
2-3 tbsp. Baby oil
2-3 tbsp. baby bath or baby shampoo

Cut roll of towels in half and take out the core. Place in plastic bowl large enough to hold towels pour the mixture over the towels. Use just like baby wipes.
