I know lately everything I have posted is something to do with bananas, but these are really good too. This lady I used to work with made them one day and they are really good. They kind of remind me of the pumpkin cookies, but with banana instead. Hope you enjoy.
1/2 cup brown sugar
1/2 cup white sugar
3/4 cup shortening
1 egg
1 cup mashed ripe bananas ( 2 medium)
1 3/4 cup old fashioned oats
1 1/2 cup flou
1 tsp salt
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp ground nutmeg
1/2 cup chopped nuts or raisins (optional)
1 cup choc. chips (optional- preferred :) )
Heat oven to 35o. Mix sugar, shortening, egg, and bananas in large bowl. Stir in remaining ingredients. Drop dough by rounded spoonfuls. Bake about 10 minutes or until light brown.
When I had these they just had chocolate chips, no nuts or raisins. And they were delicious!

Banana Bread
I got this new receipe for banana bread. So just if you want to try this kind instead of the other one. And it should be good for the banana bread french toast I was telling you both about.
1/2 cup butter
1 1/2 cups sugar
2 eggs- well beaten
1 cups banana
1/4 cup buttermilk
1 3/4 cups flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla
dash of baking soda
Cream butter and sugar. Add eggs, bananas, buttermilk and vanilla. Combine dry ingredients, add to bananas. Bake 55 min @ 350 in greased ban.
Makes 1 big pan or 5 small pans

Banana Bars
Okay, so I haven't tried these yet, but they sound delicious!
1/2 cup butter/ softened
2 cups sugar
3 eggs
1 1/2 cups bananas
1 tsp vanilla
2 cups flour
1 tsp baking soda
dash salt
Frosting
1 8 oz cream cheese
1/2 cup butter
4 cups powdered sugar
2 tsp vanilla
Cream butter and sugar. Add eggs, vanilla, and bananas. Mix flour, salt, and soda. Add to banana mixture. Stir until blended. Bake in greased 15x10x1 pan for 20-25 minutes @ 350. Frost when cooled.
Frosting- Beat butter, cream cheese, add powdered sugar, and vanilla.

Banana Nut Bread
Mary asked for this, Tara you could make it without the nuts.
2 1/2 cups flour
1 cup sugar
3 1/2 teas. baking powder
1 teas. salt
3 tbs. oil
3/4 cup milk
1 cup mashed banana
1 egg
1 cup finely chopped nuts whatever kind you perfer
Heat oven to 350 degrees. Grease and flour 9x5x3 inch loaf pan or 2 8x4x2 inch pan. Measure all ingredients into a large mixing bowl; beat on medium speed scraping bowl and sides constantly
Pour into pans Bake 55 -65 minutes or until wooden toothpick inserted in center comes out clean. Cool before slicing.
