Tortellini-Alfredo Casserole

  • 2 containers (10 ounces each) refrigerated Alfredo sauce
  • 1/8 teaspoon black pepper
  • 1 package (20 ounces) refrigerated green and white mixed cheese tortellini
  • 1 package (10 ounces) frozen chopped broccoli, thawed, drained
  • 1/2 cup garlic and herb-flavored or Parmesan-flavored bread crumbs
  • 1 tablespoon olive oil

Directions

1. Heat oven to 375 degrees F.
2. In medium-size bowl, stir together Alfredo sauce, 2 cups water and pepper. Pour 1 cup sauce mixture into bottom of 2-1/2-quart shallow casserole. Arrange half the tortellini (uncooked) in a single layer over sauce; sprinkle with chopped broccoli. Pour 1-1/2 cups sauce over top. Repeat layering remaining tortellini and remaining sauce. Cover with foil.
3. Bake at 375 degrees F for 45 minutes. Remove from oven. Heat broiler.
4. In small bowl, stir together bread crumbs and olive oil until evenly coated. Sprinkle crumbs on top.
5. Place casserole under broiler about 4 inches from heat until crumbs are golden, 1 to 2 minutes. Let stand 10 minutes before serving. Makes 8 servings.

Broccoli Soup

I found this recipe here.

4 tablespoon butter
3 tablespoon flour
3 cups of half and half (can be substituted with heavy cream or milk)
1 pound frozen broccoli, fresh or frozen
2 cans chicken broth
Grated sharp cheese for garnish, use more to make it cheesy

  1. Pulse thawed broccoli and 1 can of chicken broth with your food processor or blender until desired consistency. I like broccoli pieces, but when I am hiding it from the kids I process it until it is nice and smooth. If you use your blender, but you will have to do it in smaller batches.
  2. In your soup pot, combine the broccoli mixture and the second can of chicken broth over high heat and bring to a boil.
  3. In a sauce pan, melt the butter over medium heat. Once completely melted, add the flour and cook while stirring for about 3 minutes to create a roux. Once your broccoli/broth mixture has begun to boil, add the roux to the pot and stir until completely incorporated.
  4. Pour half and half into the boiling mixture and stir until thickened (usually right before it starts to boil).
  5. Serve and garnish with grated sharp cheddar cheese.

Ham and Cheese Calzone

This is a pampered chef recipe I found online. We had it for dinner the other night and it was really good

2 tbsp mayo
2 tsp Dijon mustard
1 cup fresh broccoli florets
1 8-oz slice smoked deli ham
½ small onion
8 oz Swiss cheese, grated, divided
1 tbsp vegetable oil, divided
2 pkg refrigerated pizza crust
1 oz Parmesan cheese, grated

1. Preheat oven to 450ºF . Combine mayo and mustard in bowl; mix
wel. Cut broccoli into small florets; dice ham. Chop onion. Combine broccoli, ham, onion and half of the Swiss cheese in bowl with mayo and mustard. Mix well.

2. Lightly brush pan with 1 tsp of the oil. Unroll one package of dough onto bottom of pan, gently stretching and pressing dough to cover bottom. Sprinkle with remaining Swiss cheese to within 1 in. of edges; spoon ham mixture over cheese. Unroll remaining dough directly over filling, matching edges of dough and shaping to fit as dough is unrolled. Press edges to seal. Brush remaining oil over dough. Cut 12 slits, in three rows of four each, into top crust.

3. Bake 14-16 minutes or until golden brown. Sprinkle Parmesan cheese over calzone. Return calzone to oven; bake 2-3 minutes. Slice and Serve.

Mary's Broccoli Salad

Salad
2 bunches of broccoli, broken up
1 purple onion chopped
1 cup grated cheddar cheese
6 strips of bacon, cooked and crumbled
1/2 cup sunflower seeds
half cup of craisins

Dressing
1 cup mayo
2 tbsp red wine vinegar
1/2 cup sugar
1/2 tsp salt

Chicken and Broccoli Alrfedo

This came from the Campbells Soup Website.

1/2 of a 16 oz pkg linguine
1 cup fresh or frozen broccoli
2 tbsp butter
1 lb chicken cut into pieces
1 can cream of mushroom soup
1/2 cup milk
1/2 cut grated parmesan cheese
1/4 tsp ground black pepper

Prepare linguine according to package directions in a saucepan. Add brocccoli during last 4 minutes of cooking time Drain linguine and broccoli well.

Heat butter in skillet over medium high heat. Add chicken ad cook until well browned, stirring often.

Stir soup, milk, cheese, black pepper, ad liguine mixture into skillet. Cook until mixture is hot and bubbly. Serve with additional paremesan cheese.

Chicken and Brocolli Casserole

Boil Chicken, then cut into bite sized pieces 3 breast
1 pkg frozen broccoli thawed and drained thoroughly
Mix together and place in a 9x 13 pan

next step:
Mix together 1 can of cream of mushroom or chicken or celery soup
1/2 Cup mayonnaise
1/2 teas. lemon juice
1 can water chestnuts chopped
1 Cup grated cheddar cheese
Pour over chicken and broccoli

1 cup cracker crumbs
1/2 cup butter melted
Mix together and place on top of casserole
Bake at 350 degrees till heated through 35-45 minutes.
This is Grandma Schneider recipe and it is good.

Asian Stir Fry

8 oz angel hair pasta
2 cups broccoli
1 lb chicken cut in chunks
1/2 cup Kraft Asian Toasted Sesame Dressing
2 btsp soy sauce
1/4 tsp ground ginger
1/4 tsp garlic powder
1/4 tsp red pepper

Cook pasta. Add broccoli last 3 minutes. Cook Chicken. Stir in dressing, soy sauce, and spices. Cook 1 min stirring occasionally Simmer on low. Drain pasta/ broccoli. Mix all ingredients in bowl.
