Double Chocolate Strawberry Topped Pancakes
- 3 cups complete pancake mix
- 1/4 cup plus 2 Tbsp. cocoa powder
- 3/4 cup vanilla yogurt
- 2 1/4 cup water
- 1-1 1/2 cups chocolate chips
- 24 oz container frozen sliced strawberries in sugar, thawed ( I used fresh strawberries)
- sweetened whipped cream
- In a large bowl, whisk the pancake mix and cocoa together until well blended. Then add the yogurt and 2 cups of the water until just until blended. If needed, add the extra 1/4 cup water. The amount of water will vary depending on the type of yogurt and pancake mix you use. You want the pancake mix to be on the thick side to hold the chocolate chips.
- Fold in the chocolate chips. Pour onto a hot greased skillet over heat just below medium. Cook pancakes until puffed and dry around the edges, then turn and cook other side.
- Serve topped with strawberries and sweetened whipped cream. Makes 10-12 large pancakes.

Taco Pizza
- I found this recipe here.
- 1 lb. ground beef
- 1 envelope taco seasoning mix
- 2 (8 oz.) cans Pillsbury crescent rolls
- 1 (16 oz.) can refried beans (I used the jalapeƱo kind)
- 2-3 cups shredded cheddar cheese or Mexican blend
- 1/2 cup chopped tomatoes
- 1/4 cup sliced black olives
- 4 green onions, chopped
- Heat oven to 375 degrees.
- Brown ground beef and drain. Add taco seasoning to the ground beef according to the package directions.
- Unroll crescent rolls into rectangles. Place in ungreased 11 1/2 inch x 16 1/2 inch jelly roll pan or cookie sheet. Press dough over the bottom and 1/2 inch up sides to form crust. Bake at 375 oven for 11 to 13 minutes or just until golden brown.
- Microwave beans in a microwave safe bowl for 1 minute. Carefully spread beans over warm crust creating a thin layer.
- Top with cooked beef mixture, sprinkle with cheese followed by tomatoes, black olives and green onion. Return to oven for 3-6 more minutes until cheese is melted. Serve immediately.

Soft Sugar Cookies
I have had no luck with sugar cookies lately. They usually don't hold their shape for me. I finally found one that is for soft cookies that I like. Now I am trying to find a crispy one that I like.
I found this recipe here.
1 cup sour cream (I used greek yogurt)
2 cups white sugar
1 cup butter
4 eggs
1 tsp vanilla
6 cups flour
3 tsp baking powder
1 tsp baking soda
1 tsp salt
Preheat oven to 350.
Combine sour cream, sugar, butter, eggs, and vanilla. Beat for a 2-3 minutes.
Add dry ingredients and mix well. Let the dough chill in fridge for 25 minutes or until firm.
Roll it out to about 1/4 inch thick and use cookie cutters to make shapes or circles. You may have to add a little flour to roll them out so the dough is workable but remember the less flour you use the softer your cookie will be.
Bake until LIGHT golden brown-no more than 10 minutes. When you take them out they will seem underdone but they aren't. Let them cool on the pan and they will be perfect and moist. It you like them harder and more crunchy just bake them a little longer.
Makes around 4 dozen.

Crock Pot Pork and Beans
I found this recipe here.
1 onion- chopped
1 lb hamburger
1 lb bacon- cooked and crumbled
Cook hamburger and onion. Crumble bacon and set aside.
Layer in 5 quart Crock Pot:
Hamburger and onion
5 (11 oz.) cans of Pork and Beans (I think 4 would be plenty or maybe leave out one of the other cans of beans)
1 1/2 c. sugar (I also think you could half the sugar)
1 1/2 brown sugar
3 T. rice vinegar
1 T. liquid smoke
1 can black beans- rinsed and drained
1 can kidney beans- rinsed and drained
1 c. ketchup
Cook on low for 9 hours. Stir after 3 hours. Stir in bacon before serving.
