Mix:
1 can cream of chicken soup
1/2 cup sour cream
8 oz cream cheese softened
1/4 cup salsa
1 tsp taco seasoning
1 small can chopped green chiles
Add:
Shredded cooked chicken. Mix well. Place mixture in tortillas and roll. Place in a greased baking dish. Drizzle with enchilada sauce (red or greeen). Sprinkle with cheese. Bake at 350 for 25 minutes.

Chicken Enchiladas
Ingredients
Chicken
1 block of cream cheese
1-2 cans of green chiles
Salt, pepper, and onion powder to taste
tortillas
green enchilada sauce
cheese
Cook and shred chicken. Add cream cheese and stir together til creamy. Add chiles, salt, pepper, and onion poder and stir. Add the filling to the tortillas. Once in the pan, cover with the enchilada sauce and cheese. Bake at 350 for 30 mins.

Slow Cooker Crack Chicken
I found this recipe on Cookies and Cups
2lbs boneless skinless chicken breasts
2 8oz blocks of cream cheese
2 packets of dry ranch seasoning
8 oz bacon cooked crisply and crumbled
In a slow cooker combine chicken, cream cheese, and ranch seasoning. Coo on low for 6-8 hours or on high for 4 hours until chicken shreds easily. Once it shreds with a large fork and mix all the ingredients til combined. Add in crumbled bacon and stir to incorporate. Serve warm. We had this on whole wheat hamburger buns.

Mexican Dorito Casserole
2 cups shredded cooked chicken
1 c shredded cheese
1 can cream of chicken soup
1/2 c milk
1/2 cup sour cream
1 can Ro-tel tomatoes
1/2 packet taco seasoning or more to taste
Bag of regular nacho cheeese doritos
Preheat oven to 350 degrees. In mixing bowl combine all ingredients except doritos. In a greased baking dish put a layer of crused doritos, then a layer of chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more cheese, cover, and bake for 30-35 minutes, til bubbling hot.

One Pan Cheesy Smoked Sausge and Pasta Skillet
1 Tbsp olive oil
1lb Hilshire Farm Smoked Turkey Sausage, sliced
1 cup diced onion
1 Tbsp miced garlic
2 cups chicken broth
1 can diced tomatoes
1/2 cup milk or heavy cream
8 oz dry pasta
1/2 tsp salt and pepper, each
1 cup shredded Cheddar Jack Cheese
1/3 cup chopped scallions, for garnish
Add olive oil to a quart saute pan over medium high heat. Add onions and sausage and cook until lightly browned. Add garlic and cook for about 30 seconds. Add chicken broth, tomatoes, milk, pasta, and seasonings. Bring the mixture to a boil, cover, and reduce heat to low. Simmer for about 15 minutes or until pasta is tender. Turn off heat and stir in 1/2 cup cheese. Sprinkle remaining cheese on top and cover for about 5 minutes to allow cheese to melt. Top with sliced scallions and serve.

Crock Pot Cheesy Chicken
1 cup of chicken stock
1 cup of colby jack cheese
1 green pepper diced
1 red pepper diced
1 pound of chicken breast
1/2 tsp of red pepper flakes
8 oz cream cheese
pinch of cayenne pepper
1/2 tsp pepper
1/2 tsp of salt
1/2 tsp garlic powder
1/2 tsp onion powder
Optional- Rice
(cooked)
Set crock pot to low. Add all ingredients except colby jack cheese. Cook for 6 hours. Add Colby Jack cheese and cook for 1 to 1.5 hours. Shred the chickn. Stir and serve over rice.
